Apt is not only the capital of Provence but also the world capital of candied fruit .
The Romans were eating fruit candied in honey. During the Crusades in the East, the Crusaders discovered jams and candied fruit. At the end of the Middle Ages, these treats come in France and the papal court in Avignon.

In 1348 , Pope Clement VI gratified a confectioner in Apt, named Auzias Maseta , the title of " Esquire confectionery ." In 1365, the consuls Apt offered candied fruit to Pope Urban V during a pilgrimage to Apt .
In the 1650s, Madame de Sevigne described the town of Apt " a chauldron of jam ."
 
 
Candied fruits are made with melon, pear, cherry, apricot, fig, plum, tangerine, angelica, citron, lemon, orange and pineapple.
In the 1960s, the Apt-Union plant candied fruit includes 10 large local factories. Apt supplied the world in candied fruit.
These sweets, used in baking, are made by replacing osmosis water fruit with sugar and ensuring the conservation of the fruit.
